Stainless, black or - what?

Now that we’ve decided to redo the kitchen, I have to develop a plan for the entire project and start to get the theme and details together which includes shopping for deals on the Major Kitchen Appliances.  I don’t want to skimp on anything and least of all the appliances.  I’m thinking all stainless but wondering, will it make it look too institutional?  I’ll go to one of the big dealers and look at the whole array.  Of course I can check most of it online although the gussied up pictures may not represent the real article too well either.  By the end of this project, I’m going to know all about remodelling kitchens!
